I had the pleasure of helping Stephanie, part owner of The Pie Shoppe, measure up some 50′s grade Fir glulam to kit out their new pie shop and coffee house on Gore Street. The French sisters renovated and opened The Pie Shoppe at 721 Gore Ave. in 9 days – a feat that only those with heaps of motivation, ingenuity and guts would be able to stomach, let alone pull off. The Pie Shoppe is among other small creative operations that have found their place in Chinatown. The neighbourhood’s lower rents has fostered a burgeoning artist and entrepreneurial community – the start of Chinatown’s much needed revitalization!
